Colorado meat-eaters already know about one of the best-kept secrets of carnivores and that would be elk. This versatile yet lean meat is perfect for stews, meatballs, or a succulent roast.

The trick to preparing elk is to remember that lean meats should be cooked at a lower temperature and like beef steaks should not spend too much time on the grill.

Grilled Lemon-Garlic Elk Steaks 

Ingredients:

2 pounds of elk 

3 tablespoons of olive oil 

1 tablespoon soy sauce 

1 tablespoon lemon juice 

1 tablespoon Worcestershire sauce

2 minced garlic cloves

1/2 teaspoon sea salt 

1/4 teaspoon black pepper 

Directions: 

Place elk steaks in a shallow pan. In a small mixing bowl add all your ingredients, whisking them together. In a shallow pan, pour the marinade over the elk steaks, cover the pan and allow to sit in the fridge for at least 6 hours. 

Pre-heat that grill on medium heat (remember, low heat). Drop those juicy elk steaks on the grill and cook each side for anywhere from 5 up to 7 minutes. 

Remove meat and allow to sit for around 5 minutes before serving.
